Cauliflower Buffalo Bites

Ingredients:

¾ whole cauliflower ⁠

1 cup panko bread crumbs ⁠

¾ cup chickpea flour ⁠

1 cup water ⁠

3 tbsp hot sauce ⁠

2 tsp garlic powder ⁠

3 tsp paprika ⁠

1 tbsp olive oil salt & pepper, to taste ⁠

Basting Sauce: ⁠

1⁄2 cup hot sauce ⁠

2 tbsp unsalted butter, melted ⁠

2 tbsp honey ⁠

1⁄2 tsp garlic powder ⁠

1⁄2 tsp paprika ⁠

Dipping sauce: ⁠

1 cup Greek yoghurt ⁠

1⁄4 cup mayonnaise ⁠

Juice of half a lemon ⁠

Handful of dill, chopped finely ⁠

Salt and pepper to taste⁠

METHOD:

Preheat oven to 180°C and line a baking tray.

Whisk chickpea flour, spices, oil, hot sauce, water, salt, and pepper into a batter.

Coat cauliflower pieces in batter, then roll in panko crumbs.

Bake 35–45 mins, flipping halfway and basting with hot sauce mix.

Stir yoghurt, mayo, lemon, dill, salt, and pepper for the dip. Serve hot.
