Feta & Pistachio Baked Dates
Ingredients:
12 medjool dates, pitted
150g feta cheese, cubed
2 tbsp honey
¼ cup walnuts
¼ cup pistachios
½ tsp ground cardamom
2 tbsp fresh parsley
Extra virgin olive oil
Salt
METHOD:
Preheat oven to 180°C and line a baking tray with paper. Slice open the dates and remove the seeds.
Coat feta cubes in honey and stuff them into the dates (save a little honey for the crumb).
Blend walnuts, pistachios, parsley, cardamom, honey and olive oil into a rough herb crumb.
Press the crumb onto the stuffed dates and place them on the tray. Bake for 10 minutes, then cool slightly and sprinkle with sea salt flakes.
