Steak Tartare
Ingredients:
200 g The Lucky Pig rump steak trimmed and finely diced
1 small shallot, finely diced
1 tbsp capers, chopped
2 cornichons, chopped
4 anchovy fillets from the tin
2 egg yolks
2 tsp Dijon mustard
1 tsp Worcestershire sauce
A few dashes of Tabasco, to taste
1 tsp fresh lemon juice
2 tbsp fresh chives, finely chopped
Salt and freshly cracked black pepper
METHOD:
Finely chop the rump steak and set aside in a mixing bowl
Place anchovies, capers and Dijon mustard in a small bowl and mix until combined. Add one egg yolk and whisk until smooth
Add finely diced shallot, Worcestershire sauce and Tabasco and stir to combine. Add lemon juice and chopped cornichons and mix again
Add the sauce mixture to the chopped rump steak and gently fold together. Season with salt and freshly cracked black pepper
Fold in chopped chives, then spoon the steak mixture into a ring on a serving plate and gently press to shape
Top with the second egg yolk, sprinkle with chopped chives and place 2 anchovy fillets on top and finish with a pinch of salt
Serve immediately with toast, crackers or as desired
